Today, I will be telling you how to cook Tuwon Garin Shinkafa also known as Rice Flour Swallow.
It is prepared using the flour from local rice. It is quite easy, simple and also very fast to prepare.
The method of preparation, is same as tuwon semovita or masara.
It’s prepared to be eaten with soup of choice. but I can say so far, that draw soup is the best and because of the smoothness of the swallow, it makes it very compatible with draw soup.
Tuwon garin shinkafa is mostly prepared and eaten in the middle belt part of Nigeria.
To prepare your flour, you need to repair the local rice and pick any form of dirt, wash and spread to dry.
When its all dried up, turn in a bowl or small bucket and take for dry grinding.
After grinding, sieve the flour before using it to prepare your swallow.
The quantity to prepare depends on the number of people you are cooking for. I will be preparing for the whole family today so I will be using 8 cups of local rice.
So, let’s begin cooking.

Add 2 liters of water to a deep pot and set on heat and allow to boil.
While you wait for the water to boil, sieve the flour in a tray.
Fetch 3 cups of the sieved flour and add to a bowl. Add water and mix with a stirrer to form a paste. Note: The paste should be a bit watery because it becomes very thick when mixed with the hot water.
Turn the paste to the now boiling water and mix well. Rinse the bowl with some water and turn into the paste in the pot and mix.
Close the pot slightly and allow to cook for 20 minutes.
When the time is up, add the rest of the flour bit by bit and stir well till a bit strong.
Cover the pot and allow to cook for 20 minutes on low heat.
When the time is up, off the heat and pack out of the pot to a suitable warmer or mold in a plate and allow to cool down a bit before serving.
