You know that moment when you want to relive the past as in when you were a child.

There are a lot of things that we ate or did before as children that we will love to eat or relieve.

Our recipe of today can be called Sesame Seed Candy, Sesame Seed Bar, Beniseed Candy, Sesame Brittle, Ridi or Kantun Ridi.

This is one of the many popular snack recipes in the Northern part of Nigeria and it is prepared using Beniseed or Sesame Seed popularly known as “Ridi” in Hausa.

This candy or snack is delicious and also very crunchy.

Let me show you how.

INGREDIENTS

  • 2 cups of Beniseed or Sesame Seed (Ridi)
  • 1 1/2 cups of sugar
  • 1 tbsp of lime juice
  • 1/2 cup of water

OTHER THINGS NEEDED

  • Rolling pin
  • Foil Sheet or Paper
  • Frying Pan
  • Spatula

SESAME SEED CANDY PREPARATION

The first thing is to breeze the sesame seed to remove all dirt particles.

Then add water and wash the Sesame Seed. Throw out the water with the floating dirt.

Next, get another bowl and wash in between bowls to be able to get the particle of the stone to settle under the bowl.

After washing well, drain out the water completely and spread it to dry.

When the sesame seed is dried up, turn it in the pan already on heat and fry.

Note: The frying should be done on medium heat and also, do not let it get burnt when frying.

Fry for 10 minutes.

You will know the sesame seed is fried when it starts bringing out a pleasant smell and it turns a bit brown like in the pictures below.

When it is fried up, allow it to cool down.

Next, set the pan on the heat and add half a cup of water to the pan.

Also, add the sugar and lastly the lime juice.

Then mix with a spatula till the sugar has dissolved completely.

Then allow it to boil till it becomes thick.

With the sugar now thick, turn the sesame seed in the pan and mix.

Mix till the seeds are well mixed up in the sugar.

Then set off the heat immediately and turn into the greased foil sheet.

Then use the spatula to spread it flat on the foil sheet.

After that, cover the top with another foil sheet and use the rolling pin to roll it flat.

When done rolling, nicely remove the foil sheet and cut the candy into your desired shape and size.

Then you can refrigerate it so it gets cold completely.

And finally we are done.
