So, finally I’m talking about how to make moringa salad or as the Hausas will say, “kwadon zogale” or “zoogale”.
I’m really excited about this recipe because it is among my favorites. It might look a bit plain and simple, but it is highly nutritious and medicinal to the body.
I will be telling you how to prepare this recipe today from start to finish.
To prepare this recipe, you will be needing the main ingredient which is the Moringa, grounded kuli kuli, onions, peppers, seasoning cubes and salt.
Instead of fresh pepper, you can also use Mixed Spiced Pepper.
Some people add tomatoes to their own, but to me I feel it’s not really necessary because the tomatoes can make it a bit watery, and we don’t want that.
The moringa I will be using today, was bought already cooked. But I will be telling you how to prepare it from the beginning with the fresh moringa leaves.

If you decide to buy the already cooked one when you want to prepare the Moringa Salad, wash the cooked Moringa with warm water and salt before using.
Then you can continue with the rest of the process after washing.
So, let’s begin cooking.
INGREDIENTS
- 8 bunch of moringa (zogale or zoogale)
- 1 large onion
- 2 1/2 cups of grounded Kuli Kuli
- 5 pieces of fresh Pepper or 2 tbls of mixed spiced pepper
- 2 seasoning cubes
- Salt to taste
- Fried Tilapia fish for garnishing.
Below is a video you can watch showing the full steps.

MORINGA SALAD PREPARATION
The first think to do is to pick the moringa from the stalk into a bowl and wash well.
After washing, add into a suitable pot, add a little water and set on heat to cook for 6-7 minutes.
Wash and slice the onions into a suitable plate and set aside.

Wash, pound the pepper and set aside also.

When the time is up, set down from heat and turn in a container.
Wash with water twice, turn into a basket and drain all the water out of the cooked moringa.

Turn the drained moringa in a dry bowl.
Add the pepper, the sliced onions, kuli kuli, the seasoning cubes and salt to taste.
Mix very well with your hand.

Taste after mixing to be sure the seasoning is okay.
And the moringa salad is ready to be garnished and served.
