
Pepper Soup is a very popular appetizer that is widely prepared for home consumption, commercial purpose (like restaurants and bars) and for events like birthday parties, get-togethers etc. that is best prepared and eaten in the evening.
There are different types of pepper soup that can be prepared such as Goat Meat Pepper Soup, Chicken Pepper Soup, Mackerel Fish Pepper Soup, Cat Fish Pepper Soup etc.
Today at Dee’s Mealz, I will be showing you how to prepare assorted cow meat pepper soup which comprises of the cow tripe(shaki), intestines, liver, lungs, kidney and the heart.
So, let’s begin cooking.
Ingredients
- 3.4kg of assorted beef
- 1 teaspoon of thyme
- 3 small size onion
- 3 stalks of spring onion (optional)
- 7 pieces of habanero pepper
- 5 pieces of chili pepper
- 2 pieces of bell pepper
- 6 seasoning cubes
- 1 teaspoon of oziza powder
- 1 teaspoon of nutmeg
- 1 teaspoon of curry powder
- 1 teaspoon of thyme
- 1 teaspoon of Spices (combination of cinnamon powder, ginger, cow and chicken seasoning)
- 7 cloves of garlic
- Salt

Preparation
Thoroughly wash the pieces of meat. When washing for the last time, add salt to the meat and wash.
After washing, put the washed pieces of meat in to a suitable pot, add 200ml of water and set on heat.

Allow to cook for 40 minutes.
Wash and blend the pepper and garlic while waiting.
Wash and slice the spring onion and the onion bulb and set aside.

After 40 minutes into cooking, add the grounded/blended pepper.

Add the chopped onion and spring onion to the pot.
Add the curry powder, thyme, spices, nutmeg, oziza powder, seasoning cubes and salt to taste.

Mix and allow to cook till soft.
When all soft, it’s ready to be served. Really good for January’s cold weather.
Serve while hot.
