Ofada Stew Recipe

Our recipe of today is popularly called Ofada Stew or Ofada Sauce. It is mostly prepared using ripe Red Bell Pepper, chilli pepper, habanero pepper and other ingredients that you will get to find out soon.

You are guessing it’s hot and spicy right? Don’t worry the level of hotness will depend on the amount of habanero pepper you add. So, if you don’t want much of the spiciness, use a small amount of the hot pepper.

Ofada stew is a very quick and tasty recipe that is very popular among the Yoruba’s of the western part on Nigeria.

The Good part is that it has its own specific taste. It is prepared using palm oil but to be precise, bleached palm oil is used. So I bleached the palm oil I used ahead of time and set it aside.

Ofada Stew or Sauce is served with our very own popular Ofada rice which is also known as unpolished rice.

I will be using goat meat and beef tripe (shaki) to prepare today’s recipe. But know that you can add a lot more than that when preparing yours.

So, let’s begin cooking.

INGREDIENTS

  • 8 pieces of habanero pepper                
  • 7 pieces of chili pepper
  • 12 pieces of red bell pepper                
  • 1 large onion bulb
  • 1 medium size chopped onion               
  • 1/2 kilo of Goat meat
  • Beef Tripe (Shaki)                                     
  • 1 large cow skin (kpomo)
  • 1 tbls of Iru (fresh locust beans)                           
  • 1 tbls of crushed crayfish
  • Bleached palm oil                                      
  • 1 tsp of thyme
  • 1 tsp of curry                                               
  • Salt
  • 4 seasoning cubes
  • 4 cooked eggs

OFADA STEW PREPARATION

The first thing to do is to wash the pieces of meat, shaki and add in a pot.

Slice in some onions in the pot of meat.

Add your seasoning (thyme, curry, seasoning cube and salt to taste) to the meat in the pot. Add water to the level of the meat and set on heat to cook till soft.

Now wash the pepper and set in a suitable bowl. Make sure to remove the seeds from the bell pepper.

Wash and slice in some onion in the bowl and grind or blend.

Note: the grinding should not be smooth.

Wash and cut the cow skin (kpomo) to required size and set aside.

When the meat is cooked, pack in a suitable plate and set aside.

Now turn the grounded pepper in the pot with the stock on heat and mix. Allow to cook till the excess water dries up.

When its cooked and all the excess water is dried up, set down from the heat.

Set a pot on heat and add the bleached palm oil. Allow to heat up before adding the cooked meat in it. Allow to partially fry before packing out of the oil.

Now add the chopped onion to the oil, mix and allow to fry for 5 minutes.

After 5 minutes, add the Iru (locust beans) and mix. Allow to fry a bit

Now turn the cooked pepper in the pot and mix.

Add the crushed crayfish and mix. Allow to cook till the water is completely dried up.

When the water is dried up, add the seasoning cubes and salt to taste and mix.

Add in the pieces of cow skin, the fried goat meat, shaki in the pot and mix.

Peel the cooked eggs, add to the pot of stew and mix.

Allow to cooked for 4 minutes before setting down from the heat and serve with your cooked Ofada rice.
