
Hey guys, welcome back to Dee’s Mealz. Today, we will be talking about how to prepare vegetable soup with ugu leaves and white zobo sepals.
This soup can be prepared in two ways. The 1st way is to prepare it in a way that it can be eaten with rice, while the 2nd method is to prepare it in a way that it can be eaten with swallow (Semovita, Tuwon Shinkafa etc.). They both have the same method of cooking; the only difference is you add locust beans when you want to prepare it with swallow.
We will be using fresh tomatoes, pepper, onion, meat, Ugu leaves etc. The tomato, pepper and onion should be grated because we do not want the texture to be too smooth.



But don’t worry if you already have your grinded tomatoes, it can still be used.
So, let’s begin cooking…
INGREDIENTS
- 3 bunches of Ugu leaves
- 8 Fresh tomatoes
- 1 bulb of onion
- 9 Habanero Peppers
- 7 Chili Peppers
- Palm Oil
- 2 tins of White zobo sepals
- Cow Skin (kpomo)
- Meat (any type)
- 5 Seasoning cubes
- ½ teaspoon of potash
- Salt

PREPARATION
Boil some water and turn into a bowl, add the white zobo and ½ teaspoon of potash and allow to rest for 15 minutes before washing twice. Note: the purpose of the potash is to reduce the sour taste.


Wash your meat, add to a pot, add a seasoning cube, salt, slice in an onion. Add water and set on heat to cook for 15 minutes before adding the washed cow skin. Allow to cook till soft.
Wash and grate the tomatoes, pepper, onions and set aside.
Pick the Ugu leaves from the stalk, set in a bowl add water and wash before chopping. After chopping, add water and salt to the leaves and allow for 5 minutes before washing.


When the meat is cooked, turn into a bowl with the stock and set the pot back on heat.
Add palm oil to the pot and allow to heat up a little bit. Turn in the grated pepper, tomatoes and onion. Mix with a spoon and allow to fry till the water is dried up.


When the water is dried up, add in the cooked meat, cow skin and the stock.
Add the seasoning cubes and salt. Mix with a spoon and allow to boil. Note: You can add a little water if necessary.

Now add the washed white zobo and Ugu leaves to the pot. Mix with a spoon and allow to cook for 7-9 minutes.


Serve with white rice when the time is up.
