How To Make Bitter Leaf Sauce (Method 1)

Welcome back to Dee’s Mealz. I’m here today with another recipe called “Bitter leaf Sauce”.

Bitter leaf is naturally known to be bitter. And while some love the bitter taste, others do not. But no need to worry as you can always make it in a way that is suitable, however you want.

The process of washing the bitter leaves, takes more time than the preparation. But after the washing is done, preparation does not take much time.

Here is a video that shows how to wash bitter leaves if you are wondering how it’s  done.

If you are the type that likes the bitter taste, then when beginning, you cook the washed leaves once and for those who don’t like the bitter taste, cook it twice. For me, I will be cooking it once using the small leaves which are very bitter.

A lot of people have the bitter leaf plant. But if you don’t, it can be found in the local market.

You can make your sauce with all kinds of meat. But for today I will be using fresh fish, cow skin (kpomo) and crayfish.

You can eat just the bitter leaf sauce as it is or with any cooked food of your choice (Spaghetti, White Rice, Tuwon Shinkafa etc.)

So let’s begin…

Ingredients

  • 2 bunches of Bitter Leaves
  • Fresh Fish
  • 2 tablespoons Crushed Crayfish
  • 1 cup of Grounded Groundnut
  • Cow Skin (kpomo)
  • 4 pieces of fresh pepper
  • 1 small size Onion
  • 2 seasoning cubes
  • Salt

How To Wash Bitter Leaf

Pick the bitter leaves from the stalk and put in a bowl. Wash the leaves with water to remove any dirt. Add 1 ½ teaspoon of salt and add 3-4 cups of water to the bowl. Start washing the leaves by scrubbing it on your palms (like how you wash clothes).

Keep scrubbing till the water turns deep green and very foamy. Then strain the leaves out using a basket and rinse with clean water until it’s all clear and not foamy.

Turn into a pot, add 1 ½ cup of water, set on heat and allow to boil.

Note: Be close by because it foams up and pours out when it begins boiling. If this happens, stir with a spoon.

Set down from heat and strain using a sieve.

Note: You can taste it to check the level of bitterness. If too bitter set on heat 1 more time.

Bitter Leaf Sauce Preparation

Cut the cow skin to your required size, wash and set aside.

Wash and grate the Pepper, Onion and set aside.

Add the strained bitter leaves into an empty pot.

Wash the pieces of fish and add to the pot.

Add the washed cow skin, 1 cup of water and set on heat and allow to boil.

Add the grated Pepper and Onion.

Now add the grounded Groundnut, the crayfish, seasoning cubes and salt to taste. Mix with a spoon and allow to cook for 10 minutes.

It should be ready to be served after 8 minutes.
