Fried Rice Recipe: How To Cook Nigerian Fried Rice

Fried rice is a simple and easily cooked rice recipe. Aside from jellof rice, coconut rice and other rice recipes, fried rice is a recipe that is mostly prepared and the best for various ceremonies and also festive seasons.

Fried rice is mostly served with Moimoi, Fried Plantain or Coleslaw as side dishes. It is prepared using lots of vegetables like carrots, green beans, green pepper etc.

This is Dorcas, today and I will be telling you how to prepare fried rice.

The method of cooking fried rice is quite special and different other rice recipes.

So, let’s begin cooking.

Ingredients

  • 8 cups of rice
  • 2 handful of green beans
  • 2 cups of green peas
  • 6 pieces of green pepper
  • ½ kg of liver
  • 3 cups of chicken stock
  • 2 tablespoon of curry powder
  • 2 tablespoon of thyme
  • Carrot
  • 12 seasoning cubes
  • Salt
  • 6 onion bulb
  • Vegetable Oil

Preparation

Parboil the rice, wash and turn the rice in a basket to drain.

Wash and cook the liver till soft and cut into small pieces.

Scrape and wash the carrots. Nicely chop the carrots into a bowl.

Pick the sides of the green bean and wash. Nicely chop them and add to the carrots.

Wash the green pepper and onion, chop and add to the bowl with the chopped carrots.

Add the chicken stock and add 3 cups of water to the pot

Add the thyme, curry, 10 seasoning cubes, salt to taste. Mix well and allow to boil.

Turn the green peas into a pot or bowl and wash. Drain and add a cup of the boiling stock in the bowl with the peas, cover and allow to steam for 8-10 minutes.

Turn the rice into the pot with boiling stock and allow to cook till soft.

When it’s cooked, set down from heat.

Set an empty pot on heat, add ½ cup of vegetable oil and allow to heat a bit.

Turn the chopped carrots, liver chunks, green peas, onion and green pepper into the pot and stir.

Drain the green beans and turn in the vegetables. Mix and allow to fry for 5 minutes.

Add ½ teaspoon of curry and thyme, 2 seasoning cubes and a little salt.

Add 3 to 4 tablespoons of water, mix and allow to cook for 4-5 minutes. Note: Do not overcook. The veggies are to be a bit crunchy.

When the time is up, turn the fried veggies into the rice and mix very well. Till the veggies are well mixed.
