Fonio or Acha is a cereal that has a similar look to couscous and is also prepared using a similar method as an oat meal.

This pudding or porridge is most popular in the Northern part of Nigeria. At the mention of the name Acha in this part of Nigeria, you will hear a lot about it.
Aside it being gluten-free, it also has a high level of iron, protein, and fiber. The best part is that this cereal can be prepared in less than 20 minutes making it a quick meal.

To prepare this pudding, you just need the Acha or Fonio itself, then sugar and milk to the desired quantity.
So, let’s begin cooking.
INGREDIENTS
- 1 1/2 cups of Acha grain (Fonio)
- Sugar (to desired quantity)
- Milk – powdered|liquid (to desired quantity)
Fonio Porridge or Acha Pudding Preparation
What you need to do first is to wash the Acha to remove all the dirt from it.



Then next is to wash in between bowls to be able to wash out settled stones beneath the bowl.

Note: You need to wash it well to avoid biting stones when eating.

After washing well, pack into a pot already on heat.

Then add enough water to it as it swells a lot.

Now stir it and cover to cook for at least 8 minutes.

When the time is up, open the pot and stir then taste to see if it’s cooked enough.

If not, add more water and stir then cover the pot and allow to cook a bit more.


Then finally you can stir it and off the heat when it’s cooked.


Now fetch the pudding in a bowl.

Then add some sugar and milk to your desired quantity.


And mix it together.
