
Egg coated yams is a very popular recipe that can be prepared for breakfast, lunch or dinner. It is prepared using yam and eggs.
Frying your yams just like that with scrambled eggs is very good and goes so well with tea. But it’s good to always try different methods once in a while.
This method involves cooking the yams first, soaking them in eggs before frying.
It is prepared using just yam and eggs. Not much right?
This recipe is very popular and is often found on road sides or market places. It is sold for quick consumption.
The best part is that it doesn’t take long to prepare and it is also very easy.
You can serve it with stew or sauce. I served mine with pepper and onion sauce.
So, let’s begin.
INGREDIENTS
• 1 tuber of yam
• Salt
• 5 Eggs
• Vegetable oil
For Garnishing
• Habanero pepper
• 1 small size onion
• 1 seasoning cube
Egg Coated Yams Preparation

The first thing to do is to peel the yam and put inside a suitable bowl.

Cut or slice into round shapes.
Note: The slices shouldn’t be too thin or too thick. Let’s just say in between.
Add water to the yam and wash.
Now pack the washed yam to a suitable pot.

Add some salt and water to the yam. Cover the pot and set on heat to cook till soft.
Break the eggs into a bowl, add some salt to the eggs and whisk well.
When the yam is soft enough, turn off the heat and pack the yam in a plate.
Now put the cooked yam in the whisked egg and flip the yam over.

While the vegetable oil gets hot, make sure yams are well soaked in the eggs.

Now add the egg soaked yams into the hot oil on heat one by one.

Flip it over after it has fried for a while.
Pack out of the oil when they’re all brown and continue frying the rest until the cooked yams are finished.

Voila. Our yams coated with eggs served with pepper and onion sauce.
