Today, I will be telling you how to prepare one among the many Hausa recipes in the Northern part of Nigeria popularly known as Danbu.
Danbu is a very popular recipe that mostly everyone knows about in the Northern part of Nigeria and it’s usually made using braised maize or rice (also known as tsaki) as the main ingredient.
And you can either use foreign or local rice (rice for tuwo).Other ingredients used in danbu making are moringa leaves, pepper, onions etc.
Danbu can be cooked in different ways by adding carrot, green peas, shredded meat and lots more. But in today’s method, I will be making it the simple way.
Danbu is not cooked like the normal cooking of other food recipes but rather steamed and I will be using a stainless basket for the steaming, you can use a steamer instead if available.
Danbu is so tasty and yummy and because of the love of eating it, I will advise when eating it, to keep water close by because it tends to choke a person most times because it’s a bit dry not like Pate.

So, let’s begin cooking.
INGREDIENTS
- 5 cups of Rice
- 1 bunch of moringa
- 2 medium size onion
- 7 pieces of shambo (chili pepper)
- 9 pieces of Habanero pepper
- 4 seasoning cubes
- Salt
- 1 cup of Vegetable oil
Will also be needing:
- Foil paper
- Stainless basket

DAMBU PREPARATION
The first thing to do is braise or crush the rice using a blender.




After crushing, turn into a bowl and add water to it.


Mix it up and allow to soak for 30 minutes.

While you wait for it to soak, pick the moringa leaves from the stalk and set aside.

Wash and pound the pepper.
Also peel, wash and slice the onions.

When the 30 minutes is up, wash the soaked rice very well.


Now pack the washed rice into the stainless basket.

Add a little salt and mix it well.
Note: the purpose of the salt is to give it a little taste.
Next add a little vegetable oil and mix.
Note: the oil is to avoid it sticking together when cooked.
Now set it aside and allow to drain a bit.
Add water to a pot fit to take the basket you will be using.
Set the water in the pot on heat and allow to heat up.
Note: Avoid adding too much water to the pot, to avoid it penetrating the basket when set in it.
When the water is hot, place the basket with the braised Rice in the pot.
Cover it with the foil paper and cover the pot.
Allow to cook till soft.

When it’s cooked and soft, wash the moringa leaves well and spread it on the cooked rice.

Cover the pot again and allow to steam for 5 minutes.
After 5 minutes, mix the now cooked moringa and the braised cooked rice together.

Then set it down from heat.
Next step
Set an empty pot on heat and add the vegetable oil.
Add the sliced onions and the pounded pepper to the pot and mix it well.


Add the seasoning cubes and salt to taste.

Then mix it up till the the seasoning is all melted.
Now turn the pre-danbu to the pot and mix well.
And the Danbum or Danbun Shinkafa is ready.
